Brunch is something I live for and this healthy breakfast bowl is one of my top picks! Although this recipe was inspired by one of my favorite restaurants in Charlotte, Tupelo Honey, it is much different and definitely does not consist of the same ingredients.
Ingredients
- eggs
- grits (original, butter, or cheese flavored)
- potatoes
- onions
- peppers
- avocado
- hot sauce
- rosemary
- parsley
- *optional: bacon/sausage*

Healthy Breakfast Bowls with Eggs
There are plenty of ways to make a breakfast bowl and you can add basically whatever ingredients you think taste good together.
I chose not to add additional ingredients such as cheese, bacon, and black eyed peas; therefore, making this a healthier option.

Printable Healthy Breakfast Bowl Recipe
Healthy Breakfast Bowl
Ingredients
- 2 tsp olive oil
- 1/4 avocado sliced
- 1-2 eggs cooked however you prefer
- 1/2 tsp sea salt
- 1/2 tsp ground black pepper
- 1 cup grits
- 1/2 tsp hot sauce
- 1/4 cup onions diced
- 1/4 cup green peppers diced
- 1 cup red potatoes
- rosemary for garnish
- parsley for garnish
Instructions
- In a skillet, heat the olive oil over medium heat. Add potatoes and cook for about 7 minutes.
- Add the onions and peppers to the skillet. Continue to cook for about 8-12 minutes.
- Cook eggs to your desired preference in a separate pan.
- Boil water on a stovetop and mix with a packet of grits.
- Serve the potatoes over top the grits. Add the egg.
- Slice 1/4 of an avocado and add to the top.
- Add salt, pepper, and hot sauce.
- Garnish with fresh rosemary and parsley.
