This spinach breakfast skillet can be made using a variety of ingredients from the fridge – eggs, spinach, tomatoes, cheese, mushrooms, peppers, etc. This particular recipe involves my two favorite egg additions (spinach and tomatoes). It also includes homemade diced red potato hash browns.
The first thing required to prepare this easy spinach breakfast recipe is to dice red potatoes into small sized portions. You may choose to substitute frozen hash browns for the homemade ones.
Next, add the diced potatoes to a heated skillet. Add salt and pepper. Allow them to cook for about 20-30 minutes, or until crisp and golden brown.
Once the potatoes have cooked for a while, add the spinach and/or other ingredients of your choice. Add the eggs. Cook for about 5-7 minutes, or until done.
I go back and forth when adding tomatoes to my egg recipes; however, for this one I chose to top it off at the end.

Spinach Breakfast Skillet
Ingredients
- 2-4 medium red potatoes
- 4 eggs
- 3 tablespoons olive oil
- 1 1/2 teaspoons salt
- 1 1/2 teaspoons pepper
- 1/4 cup diced tomatoes
Instructions
- Heat a skillet on medium heat and add olive oil. Rinse the potatoes and dice them into small sized pieces.
- Add the potatoes to the skillet and cook for about 20-25 minutes. Add the salt and pepper.
- Add the spinach and eggs. Cook for about 5-7 minutes, or until done.
- Top with fresh tomatoes and other ingredients of choice. Serve hot.
