Vegetable dumplings are otherwise known as vegetable gyoza’s and/or vegetable potstickers in Japanese culture. They are pan-fried treats that can be served by themselves with soy sauce or with a side of plain, white rice.
The first step in the creation of these homemade vegetable gyozas is to make the dumpling wrapper. This consists of 3 ingredients: all-purpose flour, salt, and hot water. Mix these ingredients and knead the dough for about 3-5 minutes. Put the dough firmly in cling wrap and let it chill in the refrigerator for 30 minutes.
*This particular recipe is for vegetable gyozas but feel free to add a meat of your choice if you would like!*
For the vegetable mixture, you will need cabbage, carrots, mushrooms, onions, garlic, and ginger. Along with the healthy vegetables you will need sesame oil, soy sauce, and rice vinegar.
Prepare the vegetable dumpling mixture on the stove top according to the directions below. Then, set to the side.
Once the dough has been chilled, take it out of the refrigerator and cut it in half. Roll it out with a rolling pin into a thin piece of dough. Use a round cookie cutter or a glass cup top to cut out circular pieces that will be used as the dumpling wrappers.
Use a spoon to begin scooping the healthy vegetable mixture into the dumpling wrapper. Lightly brush the edges of the dumpling with water and then begin the folding process.
This is a little bit tricky but simply hold the dumpling and use your fingers to press the two edges together. The water helps seal them once they are folded together.
To cook the vegetable gyozas, or vegetable dumplings, add a little oil to a pan on medium heat. Allow them to cook for about 2-3 minutes, then add 1/4 cup of water and place a lid on the pan. Steam for about 7-10 minutes, or until all of the water has evaporated.
As mentioned previously, these can be served with a side of white rice, by themselves with soy sauce, or with this special dipping sauce. Lastly, feel free to serve this meal with one of our favorite desserts.

Ingredients
Gyoza Wrapper
- 2 1/2 cups all-purpose flour
- 1/2 tsp salt
- 2/3 cup hot water
Healthy Vegetable Filling
- 2 tbsp sesame oil
- 2 cloves garlic minced
- 2 tbsps ginger
- 1 cup onion diced
- 2 whole carrots shredded
- 7 oz mushrooms chopped
- 7 oz cabbage shredded
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- salt & pepper to taste
Instructions
Gyoza Wrapper
- Combine the flour, salt, and hot water. Mix until a dough is formed.
- Knead the dough for about 3-5 minutes on a flat surface.
- Form a ball with the dough and wrap firmly with cling wrap.
- Refrigerate for 30 minutes.
- Divide the dough in half and roll it out thinly.
- Use a round cookie cutter or a glass cup top to cut out circular pieces.
Healthy Vegetable Filling
- Finely chop the vegetables and heat the oil over medium heat.
- Add the carrots, mushrooms, and onions and fry for about 3 minutes.
- Add the cabbage and some salt. Continue to cook for about 7 minutes, or until the veggies are cooked thoroughly.
- Add the sesame oil, rice vinegar, soy sauce, garlic, and ginger. Cook for about 2-3 minutes.
- Set aside.
Vegetable Gyozas
- Take the circular dumplings that were formed out of the dough and lightly brush the edges with water.
- Use a spoon to put the healthy vegetable filling into the wrapper.
- Use your fingers to press the edges of the wrapper together and fold down the dough.
- Add the vegetable gyozas to a pan with oil over medium heat.
- Allow them to cook for about 2-3 minutes, then add 1/4 cup of water.
- Place a lid on the pan and let the gyozas steam for 7-10 minutes, or until the water has evaporated.
- Serve with soy sauce or with a side of white rice.
