A savory and delicious, 15 minute chicken and cheese quesadilla that is great for a quick lunch recipe. Please note that we do use leftover chicken breasts (or you can opt to use a rotisserie chicken) so that cuts a lotttt of cooking time.
You CAN, however, cook your own chicken breasts if you have more time on your hands. That will obviously take more time so just remember to account for that.
Ingredients:
- leftover chicken breasts (we used 2 but use as much as you’d like!)
- shredded cheese
- tortilla wraps
- sour cream
- avocado
- salsa
- cilantro
Preparing the Chicken and Cheese Quesadilla
Remove your leftover chicken breasts from the refrigerator and begin shredding them with a fork and your hands. Remember, you may choose to use a rotisserie chicken, or cook your own, if you prefer!
I will say though, what makes this a 15 minute chicken and cheese quesadilla recipe is that it calls for leftover chicken. 🙂
Place a tortilla wrap flat on a surface and layer with chicken and then cheese. You may choose to even add tomatoes, peppers, onions, etc. but for the sake of this 15 minute recipe I’m going to leave those out.
Heat up either a nonstick skillet, or griddle, on medium-high heat. Put a little olive oil in the pan and place the tortilla on it. Place an additional tortilla wrap on top of the quesadilla.
Flip the quesadilla after allowing it to brown for about 5-7 minutes. Cook on each side until golden brown.
Serve the chicken and cheese quesadilla with your choice of toppings. Our favorites include avocado, sour cream, salsa, shredded cheese, and cilantro! Enjoy! 🙂

Chicken and Cheese Quesadilla
Ingredients
- 2 whole chicken breasts
- 1 cup mozzarella cheese
- 4 tortillas
Instructions
- Remove the leftover chicken breasts from the refrigerator and shred them completely.
- Heat up about a tablespoon of olive oil on a skillet (or griddle) on medium-high heat.
- Place a tortilla wrap flat on the surface and layer with chicken and cheese.
- Add the quesadilla to the pan. Quickly top with another tortilla wrap on top.
- Cook the chicken quesadilla on each side for about 5-7 minutes, or until golden brown.
- Top with your choice of toppings and enjoy! 🙂
