Chicken and Cheese Quesadilla

A savory and delicious, 15 minute chicken and cheese quesadilla that is great for a quick lunch recipe. Please note that we do use leftover chicken breasts (or you can opt to use a rotisserie chicken) so that cuts a lotttt of cooking time.

Ingredients
  

  • 2 whole chicken breasts
  • 1 cup mozzarella cheese
  • 4 tortillas

Instructions
 

  • Remove the leftover chicken breasts from the refrigerator and shred them completely.
  • Heat up about a tablespoon of olive oil on a skillet (or griddle) on medium-high heat.
  • Place a tortilla wrap flat on the surface and layer with chicken and cheese.
  • Add the quesadilla to the pan. Quickly top with another tortilla wrap on top.
  • Cook the chicken quesadilla on each side for about 5-7 minutes, or until golden brown.
  • Top with your choice of toppings and enjoy! :)
