Chicken and Cheese Quesadilla
A savory and delicious, 15 minute chicken and cheese quesadilla that is great for a quick lunch recipe. Please note that we do use leftover chicken breasts (or you can opt to use a rotisserie chicken) so that cuts a lotttt of cooking time.

- 2 whole chicken breasts
- 1 cup mozzarella cheese
- 4 tortillas
Remove the leftover chicken breasts from the refrigerator and shred them completely.
Heat up about a tablespoon of olive oil on a skillet (or griddle) on medium-high heat.
Place a tortilla wrap flat on the surface and layer with chicken and cheese.
Add the quesadilla to the pan. Quickly top with another tortilla wrap on top.
Cook the chicken quesadilla on each side for about 5-7 minutes, or until golden brown.
Top with your choice of toppings and enjoy! :)
