This red potato salad was inspired by one of our favorite Food Network stars, Pioneer Woman!
If you guys follow us on Instagram then you know Paul and I LOVE her! We spend most Saturday/Sunday mornings watching her show on the Food Network Channel. She has taught us a lot about cooking and we appreciate it so much!
This Pioneer Woman red potato salad recipe will impress anyone you serve it to! It is refreshing and perfect as a side to your favorite meal.
Ingredients
- red potatoes
- mayonnaise
- sour cream
- white wine vinegar
- Dijon mustard
- kosher salt
- ground black pepper
- celery
- chopped dill
Another ingredient that we chose not to add was bacon. Pioneer Woman’s original recipe calls for bacon so you may want to add it! Just call it red potato salad with bacon… hahaha.
Preparing the Red Potato Salad Recipe
Paul and I served this red potato salad recipe with grilled chicken and oven roasted asparagus. But first, we made an appetizer, Bang Bang shrimp! It was amazingggg!
Make sure to watch our date night with Liz and Paul video on YouTube to see how we prepared this dish. Don’t forget to subscribe to our channel! 🙂
Red Potato Salad
Ingredients
- 3 lb red potatoes
- 2/3 cup mayonnaise
- 1/2 cup sour cream
- 2 tbsp white wine vinegar
- 1 tbsp Dijon mustard
- 1 tsp kosher salt
- 1 tsp ground black pepper
- 2 stalks celery chopped
- 1/4 cup chopped dill
- 6 slices cooked bacon chopped
Instructions
- Place the potatoes in a large pot and cover with water. Season with salt. Bring the water to a boil over high heat, then reduce to a simmer over medium heat. Cook until the potatoes are fork tender, about 20 minutes. Drain the potatoes, then let cool slightly and cut in half or quarters (depending on the size of the potatoes). Let cool completely, about 1 hour.
- Meanwhile, in a large bowl, whisk to combine the mayonnaise, sour cream, vinegar, mustard, salt, and pepper.
- Add the celery, dill, and cooled potatoes to the bowl with the dressing. Stir gently to combine. Top with crispy bacon right before serving.
