Healthy Homemade Vegetable Soup
A delicious, flavorful, healthy homemade vegetable soup loaded with vitamins and nutrients from fresh ingredients!
Ingredients
- 2 cans diced tomatoes *we use the Hunt's diced tomatoes with basil, garlic, and oregano
- 1 can dark red kidney beans
- 1 can cannellini beans
- 1 cup potatoes
- 1/2 cup carrots
- 1/4 cup celery
- 1/4 cup onion
- 1 cup okra
- 1 cup green beans
- 1/2 cup corn
- 4 cloves garlic
- 2 tbsp basil
- 1 tbsp oregano
- 2 dried bay leaves
- salt & pepper
Instructions
- Dice all of the vegetables: carrots, celery, onion, potatoes, and garlic
- Add to the crockpot on medium/high heat
- Add the cans of diced tomatoes & beans
- Add the spices
- Cook for about 6-7 hours
