A delicious, flavorful, healthy homemade vegetable soup loaded with vitamins and nutrients from fresh ingredients!

Ingredients
  

  • 2 cans diced tomatoes *we use the Hunt's diced tomatoes with basil, garlic, and oregano
  • 1 can dark red kidney beans
  • 1 can cannellini beans
  • 1 cup potatoes
  • 1/2 cup carrots
  • 1/4 cup celery
  • 1/4 cup onion
  • 1 cup okra
  • 1 cup green beans
  • 1/2 cup corn
  • 4 cloves garlic
  • 2 tbsp basil
  • 1 tbsp oregano
  • 2 dried bay leaves
  • salt & pepper

Instructions
 

  • Dice all of the vegetables: carrots, celery, onion, potatoes, and garlic
  • Add to the crockpot on medium/high heat
  • Add the cans of diced tomatoes & beans
  • Add the spices
  • Cook for about 6-7 hours
