Paul and I absolutely love watching cooking shows together and, truth be told, we watch The Pioneer Woman every Saturday morning on Food Network. She has taught us so much and we loved making this Pioneer Woman chicken pie! 🙂
I did modify this chicken pot pie recipe with pie crust and chose not to add a top layer of crust, hence the easy chicken pie recipe title because it is technically not a ‘pot pie’.
Also, please note that this is a chicken pie recipe with frozen pie crust. You may choose to make a homemade pie crust or opt out and buy a frozen pie crust at your local grocery store! We used a Pillsbury pie crust for this easy chicken pie recipe and it turned out delicious!

Easy Chicken Pie Recipe
Ingredients
- 1/2 cup onion diced
- 1/2 cup carrot diced
- 1/2 cup celery diced
- 3 cups chicken or turkey shredded
- 1/4 cup flour
- 4 tbsp butter
- 3 cups chicken broth low-sodium
- 1/4 tsp turmeric
- 1/4 cup half and half
- 1 frozen pie crust Pillsbury
- salt and pepper to taste
- fresh thyme to taste
Instructions
- Preheat the oven to 375 degrees.
- Take the frozen pie crust out of the freezer to begin thawing.
- Heat a nonstick skillet over medium-high heat. Melt the butter and add the onions, carrots, and celery. Cook for about 3-5 minutes.
- Add the chicken (or turkey) and sprinkle the flour over the top slowly, mixing everything together.
- Allow to cook for about a minute. Add the chicken broth and stir.
- Once this begins to thicken, add all of the spices. Mix well.
- Begin pouring the ingredients into the frozen pie crust you sat out previously.
- Place the chicken pie in the oven and cook for about 30 minutes.
- Take it out of the oven and place tinfoil on top of the pie if it is getting too browned.
- Place the pie back in the oven and allow it to cook for another 15 minutes.
- Let it cool for about 5 minutes before serving.
- Enjoy!
