Preheat the oven to 375 degrees.
Take the frozen pie crust out of the freezer to begin thawing.
Heat a nonstick skillet over medium-high heat. Melt the butter and add the onions, carrots, and celery. Cook for about 3-5 minutes.
Add the chicken (or turkey) and sprinkle the flour over the top slowly, mixing everything together.
Allow to cook for about a minute. Add the chicken broth and stir.
Once this begins to thicken, add all of the spices. Mix well.
Begin pouring the ingredients into the frozen pie crust you sat out previously.
Place the chicken pie in the oven and cook for about 30 minutes.
Take it out of the oven and place tinfoil on top of the pie if it is getting too browned.
Place the pie back in the oven and allow it to cook for another 15 minutes.
Let it cool for about 5 minutes before serving.
