A delicious and simple french toast, loaded with blueberries, is the perfect breakfast recipe for anyone looking to start their day with sweet and nutritious food. This has always been one of my absolute favorite breakfast meals for Saturday mornings.
The ingredients required include milk, powdered sugar, vanilla, cinnamon, eggs, potato bread, and fresh blueberries. Please note that the potato bread is what makes a huge difference when making homemade french toast.
How to Prepare Simple French Toast
The first step for the homemade french toast is to combine the milk, eggs, vanilla, and cinnamon in a bowl. Mix it well. Place the pieces of bread in the mixture, rotating it so that each side is covered.
Spray a skillet and put over medium/medium-low heat. Place the blueberry french toast on the skillet and cook each side for about 3-5 minutes, or until light brown.
You may choose to heat up the blueberries with a small amount of blueberry flavored syrup and top the french toast while still in the pan. Cook for about 1 minute.
Or, you may simply choose to top the homemade french toast with fresh blueberries and powdered sugar. Either way is just as delicious!

Simple French Toast – Blueberry
Ingredients
- 12 slices potato bread
- 4 eggs
- 1 cup milk 2%
- 1 tbsp vanilla
- 1/4 tsp salt
- 1-2 tsp cinnamon
- 1 cup fresh blueberries
- 1 tsp powdered sugar
- 1/2 cup maple syrup as needed
Blueberry Sauce
- 1 cup fresh blueberries
- 1 cup sugar
- 1 cup cold water
- 2 tbsp cornstarch
- 1 tbsp butter
Instructions
- Combine the eggs, vanilla, cinnamon, milk, and salt in a bowl. Mix well.
- Spray a non-stick skillet and heat over medium low heat.
- Dip the potato bread pieces in the mixture one at a time, rotating so that each side is covered completely.
- Place the soaked pieces in the non-stick skillet. Cook on each side for about 3-5 minutes, or until light brown.
- Create the blueberry sauce by mixing all of the ingredients in a pan until simmering.
- Top the homemade blueberry french toast with the blueberry sauce topping and powdered sugar.
