Simple French Toast - Blueberry

Homemade Simple French Toast is the perfect breakfast recipe for anyone looking to start their day with sweet and nutritious food. Made with fresh blueberries and topped with powdered sugar!

Ingredients
  

  • 12 slices potato bread
  • 4 eggs
  • 1 cup milk 2%
  • 1 tbsp vanilla
  • 1/4 tsp salt
  • 1-2 tsp cinnamon
  • 1 cup fresh blueberries
  • 1 tsp powdered sugar
  • 1/2 cup maple syrup as needed

Blueberry Sauce

  • 1 cup fresh blueberries
  • 1 cup sugar
  • 1 cup cold water
  • 2 tbsp cornstarch
  • 1 tbsp butter

Instructions
 

  • Combine the eggs, vanilla, cinnamon, milk, and salt in a bowl. Mix well.
  • Spray a non-stick skillet and heat over medium low heat.
  • Dip the potato bread pieces in the mixture one at a time, rotating so that each side is covered completely.
  • Place the soaked pieces in the non-stick skillet. Cook on each side for about 3-5 minutes, or until light brown.
  • Create the blueberry sauce by mixing all of the ingredients in a pan until simmering.
  • Top the homemade blueberry french toast with the blueberry sauce topping and powdered sugar.
