Grilled Sausage, Peppers, and Onions

A delicious grilled sausage peppers and onions recipe tossed in a herb vinaigrette. This meal is great for summer cookouts with the family, or for a quick dinner recipe when you've had a long day.

Ingredients
  

  • 2 large bell peppers red and yellow
  • 2 large red onions
  • 3 cloves garlic
  • 2 tbsps extra-virgin olive oil
  • 1 lb sausage links
  • 1/4 cup fresh parsley chopped
  • 1 tbsp red-wine vinegar
  • 1/4 tsp salt & pepper

Instructions
 

  • Preheat grill to medium-high heat
  • Cut up the peppers, onions, and sausage
  • Toss the sausage, onions, and half the garlic in a bowl together
  • Oil the grill rack. Grill the peppers, onions, and sausages - turning occasionally
  • Grill the sausages for about 8-10 minutes & the vegetables for about 10-12 minutes
  • Whisk the olive oil, parsley, vinegar, and salt & pepper in a bowl
  • Add the vegetables and toss in the mixture
  • Serve the sausage and vegetables over rice
  • Top with fresh parsley
