Southwestern Shrimp

This southwestern shrimp skillet has a combination of traditional Mexican cuisine combined with spicy Southern Texas flavors.

Ingredients
  

  • 1 lb shrimp peeled & deveined
  • 4 ears corn on the cob
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 red onion
  • 1 clove garlic minced
  • 1/2 cup water
  • 2 tbsp olive oil
  • 1 lime
  • 5 fresh basil leaves

Shrimp Rub

  • 1 tsp chili powder
  • 1/4 tsp coriander
  • 1/2 tsp dried oregano
  • 1/4 tsp cumin
  • 1/4 tsp black pepper
  • 1/2 tsp kosher salt

Instructions
 

  • Combine the ingredients for the Shrimp Rub. Mix together well.
  • Rub the peeled and deveined shrimp in the Shrimp Rub. Set to the side.
  • Add the corn on the cob to a pot of boiling water. Allow to cook for about 5-7 minutes.
  • Heat olive oil in a pan over medium heat. Add the corn, bell peppers, garlic, and onion. Cook for about 8-12 minutes.
  • Cut the corn off of the cob and add to the mixture.
  • Top with fresh basil and spritzed lime juice.
  • Serve with a side of wild grain rice.
